The word is of French origin, deriving from the Latin crispa, meaning "curled." Crepes
originated from Brittany, a region in the northwest of France, and their consumption is
widespread in France and they are considered as a national dish, and they are also increasingly
popular in North America and South America. In Brittany, crepes are traditionally served with
cider.
Traditionally, the Bretons used buckwheat flour to make their crepes called gallettes. Today
crepes are renowned throughout Europe and synonymous with Paris, are its Parisian creperies.
The most famous of crepes, Crepe Suzette is said to have been invented by mistake in 1891 at
the Café de Paris in Monte Carlo by a 14 year old assistant waiter Henri Carpentier. He was
preparing a dessert for the Prince of Wales, the future King Edward VII of England and his
companion whose name was Suzette.
